Rather than carry that much cash, let me suggest the following: bring about 100 euros. That will cover tips for cabs, lunch, even a moderately priced dinner the first day or so. Settle in and relax a bit. Then, use your ATM card to withdraw cash as you need. Your bank will charge a small processing fee, but it 's not much. I was in Provence for 10 days and spent less than a thousand dollars. Paris, of course, is a bit more expensive. Be sure to inform your bank and credit card company that there will be card activity in France.
Most good restaurants take cards. Take the phone numbers for your bank and credit card companies. If, heaven forbid, something should happen, you can stop the cards immediately.....but you can't replace $1200 cash if it's stolen.
