I work for Go Ahead Tours and took this tour in November of 2007. I know it's not super recent but since no one else has responded I wanted to at least give you my two cents - as best as I can remember it!
The day we traveled to Giza, Memphis and Saqqara was a pretty eventful day! We started out early and went to see the Memphis and the Colossal statues of Memnon. We walked through a local village and it was here that we got to enter into our first tomb and first pyramid (although it looked more like a hill of dirt). Then we went on to Saqqara. We walked around the pyramid structure but could not enter this pyramid because it was not stable enough. We stopped at a "Carpet School" where we got to meet some of the locals and see how they weave the fabulous silk carpets. This was a highlight for me! After that we finally arrived at the Great Pyramids. Those of us who chose to were able to take a camel ride across the desert toward the Pyramids. Then, I think we had about an hour to an hour and a half to walk around and take in these amazing sights. You could enter the Great Pyramid if you choose to, however, it was a long steep hike up and you have to do it crouched over. It was also an additional $10 or so to enter. There is nothing much left inside but it was an amazing experience to be inside one of the great wonders of the world! We did not get to see the solar barque (boat) museum but if it is something you are really interested in, talk to your tour director and see if he/she can arrange it. Finally, we went to see the Sphinx which was again, amazing to see it's immense size!
I believe dinner was included that evening at the hotel. As far as I know of, no one in our group attended the Giza light and sound show, (There is the opportunity to do the Light and Sound show at Karnak as an optional excursion) but again, ask your tour director for help arranging it if it is something you'd like to see.
